Doppelhop

I like the Doppelbock with their malty note but I wanted to try a new style with more hops.

11 HCU (~8 SRM)
Bitterness: 44 IBU
OG: 1.074 FG: 1.015
Alcohol: 7.6% v/v (6.0% w/w)
Water: Soft water with 1/2tsp gypsum.
1/2 tsp of irish moss during last 2 hours
Grain: 11 lb. German Pilsner
4 lb. German Munich
1 lb. Carahell
.5 lb. Dextrine malt (Cara-Pils)
Mash: 72% efficiency
20 min rest at 126° F
90 min at 150° F
Sparge 5 gal at 168° F
Boil: 120 minutes SG 1.049 9 gallons
Long boil to promote caramelization
Hops: 1.0 oz. Hallertauer (9.5% AA, 120 min.)
.5 oz. Hallertauer (9.5% AA, 60 min.)
Yeast: White Labs WLP820 - Oktoberfest
