OG: 1.065 FG: 1.016
Alcohol: 6.3% v/v (4.9% w/w)
Water: All Sonora Brewing Co. brewery adjusted water.
Grain: 8 lb. Belgian Pilsner
12 lb. American Munich
Mash: 56% efficiency
Mash in at 123deg.F for 30 min., step up to 153deg.F for 1 hour, pull thin decoction to mash out at 168deg.F for 10 min.
Boil: 75 minutes SG 1.055 7 gallons
Hops: 2 oz. Saaz (2.8% AA, 60 min.)
2 oz. Saaz (2.8% AA, 30 min.)
Yeast: Wyeast 1000XL Budvar Lager yeast starter from 3rd generation slurry.
Log: Primary @ 55deg.F until hit FG then lager @ 35deg.F.
Carbonation: 2.3 volumes Keg: 7.7 psi @ 35°F
Corn Sugar: 1.85 oz. for 5 gallons @ 35°F
