DA'YUKINATOR

This beer was aptly named for my big, burly yellow lab "YUKER."

Type: All grain Size: 5.5 gallons
Color:
43 HCU (~20 SRM)
Bitterness: 28 IBU
OG: 1.096 FG: 1.090
Alcohol: 0.8% v/v (0.6% w/w)
Water: Distilled water from my local water store.
Grain: 3 lb. Belgian pale
2 lb. German Pilsner
8 lb. Belgian Munich
2 lb. German Vienna
1 lb. American victory
1/2 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraMunich
1/4 lb. British Carastan
2 oz. American chocolate
Mash: 80% efficiency
Add grains to 4 1/2 gallons 140° water - Rest 125°for 30 min.
Add 2 gallons 200° water - raise and rest 160°-164° for 60 min.
Sparge 4 gallons 190° water. If Hop profile looks familiar...I took it note for note from the DOMINATOR II recipe in this same category.
Boil: 60 minutes SG 1.070 7.5 gallons
Added 2 tsp. Irish Moss as habit.
Hops: .5 oz. Perle (8% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 45 min.)
.5 oz. Hallertauer Hersbrucker (5% AA, 30 min.)
.5 oz. Tettnanger (4.5% AA, 30 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Hallertauer Hersbrucker (aroma)
.5 oz. Saaz (aroma)
Yeast: 1007 German Alt Yeast & WLP028 Edinburgh Ale Yeast. I had it left over from two other newly finished beers so I borrowed 1/3 from each from the trub.
Log: Primary 1 day @ 65°-70°. Secondary 2 weeks @ 40°-50°
Lager in Keg.
Carbonation: Hit with 10 lbs. and then I plan to lager this beer for 6 months in a keg in the deepest regions of my frig or maybe a buddies frig who doesn't own kegging gear.
Tasting: I don't know how this one turned out. It is 11/29/00 and I am transfering into the secondary tomorrow. Then it's 6 months and 2 wks. until I know. Maybe check back in June to see if the tasting went well. Many thanks to FRANZKELLER for his tasty hop profile
