Beer: BIGHAM STRONG ALE Style: Maibock
Type: Extract w/grain Size: 4 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 12 IBU
OG: 1.067 FG: 1.013
Alcohol: 6.9% v/v (5.5% w/w)
Grain: 4 oz. Dextrine malt (Cara-Pils)
2 oz. Belgian CaraVienne
4 oz. Canadian Honey Malt
Boil: 60 minutes SG 1.159 1.6875 gallons
4 lb. Alexander's Pale malt extract syrup
3 lb. Wheat malt extract syrup
Half-way through boil add:
~ 3/4 oz Freshly grated ginger
~ 1 tsp Freshly ground cardamom
During final 15 minutes add Irish moss.
Hops: 1 oz. Perle (7.5% AA, 60 min.)
Yeast: Nottingham Ale Yeast
Log: After primary fermentation slows, transfer to secondary with:
~ 1/4 oz Freshly grated ginger
~ 1/2 tsp Freshly ground cardamom
(above contained in cheesecloth or somesuch)
Carbonation: 3/4 cup honey: dissolve in 12-ounces of boiled, still steaming water
