Non-traditional Bohemian Pilsner.

Type: Extract w/grain Size: 5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 34 IBU
OG: 1.048 FG: 1.015
Alcohol: 4.2% v/v (3.3% w/w)
Water: Pittsburgh City tap water used.
Grain: 4 oz. American 2-row
2 oz. American crystal 90L
Steep: Grain steeped in 3gal of water untill temperature reached 200°F.
Boil: 60 minutes SG 1.080 3 gallons
1 lb. Corn sugar
5 lb. 5 oz. Light malt extract
Hops: 1 oz. Saaz (3.6% AA, 60 min.)
1 oz. Saaz (3.6% AA, 45 min.)
1 oz. Saaz (4.2% AA, 30 min.)
.75 oz. Saaz (4.2% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Wyeast 2278, Czech Pils.
Log: Primary Ferment: 5 days at 60°F
Secondary Ferment: 12 days at 50°F
Lager: 6 weeks
Carbonation: Bottle conditioned. Primed with 3.5oz of corn sugar.
Tasting: Pilsner #1 has a hoppy character with a hint of fruityness.
I think this is a very good beer. In the future, though, I will use
more extract, and no corn sugar. Hopefully, the result will be a more
traditional Bohemian Pilsner.
