A Budvar recipe with slight modifications

Type: All grain Size: 5 gallons

4 HCU (~4 SRM)
Bitterness: 25 IBU
OG: 1.048 FG: 1.012
Alcohol: 4.7% v/v (3.7% w/w)
Water: 50% distilled and well water
Grain: 9.33 lb. German Pilsner
1 oz. Belgian aromatic
6 oz. American crystal 10L
Mash: 65% efficiency
122°F 25 min protein rest 90 minutes at 150°F
Boil: 90 minutes SG 1.037 6.5 gallons
Irish Moss @ 12 minutes
Hops: .75 oz. Saaz (3.75% AA, 70 min.)
.5 oz. Saaz (3.75% AA, 20 min.)
1 oz. Saaz (3.75% AA, 10 min.)
.5 oz. Saaz (3.75% AA, 5 min.)
1 oz. Saaz (aroma)
Yeast: Wyeast 2124 AKA 34/70 ferment at 50°F for 8 - 12 days using a 24 hr 58°F Diacetyl rest.
Then rack to secondary lager for 5 weeks
Log: peaks 1 to 3 months keeps 5 months at cellar temps
Carbonation: Prime with 1.25 cups light DME boiled in 2 cups of water for 10 minutes
