Propitious Pils

Based on Papazian's Propensity Pilsner except I cut way back on the honey.

Type: Extract w/grain Size: 6. gallons
Color:
9 HCU (~7 SRM)
Bitterness: 41 IBU
OG: 1.051 FG: 1.009
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 1 lb. light crystal
Boil: 60 minutes SG 1.103 3 gallons
5.5 lb. Very Light Dried Malt Extract
1.25 lb. Clover Honey
Hops: 2 oz. Saaz (3.6% AA, 60 min.)
1 oz. Saaz (3.6% AA, 45 min.)
.5 oz. Saaz (3.6% AA, 30 min.)
.5 oz. Halletauer (3.9% AA, 30 min.)
1.0 oz. Saaz (aroma)
Yeast: Wyeast 2278--Czech Pils
Log: Brewed on Feb 17. Pitched yeast at 69°. Next day, moved fermenter to 49° room.
Feb 23--raised to 65° for diacetyl rest.
Feb 24--racked to secondary. Resume fermentation at 49°.
Feb 25--dry hopped with 1/2 oz Saaz.
March 3--moved fermenter to 33° refrigerator.
March 28--primed with scant cup corn sugar and bottled. Warm conditioned at 65° for 10 days.
April 3--moved back to 49° to finish carbonating
April 15--fully carbonated. Nice smooth taste with good hop aroma. Great foamy head. Moved to refrigerator for further lagering.
May 2--extremely fine tasting Pils. Similar to Pilsner Urquel.


Tasting: Might use part Laaglander's DME in order to raise final gravity a bit. Slightly light bodied for the style.

The next Pils we brew will probably be an all-grain version of this recipe.
