Maiden Pilsner

My first shot at a lager. I swayed away from the traditional pilsner with the addition of the wheat DME. Just a little change that I though would be interesting.

Type: Partial mash Size: 5.25 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 79 IBU
OG: 1.059 FG: 1.014
Alcohol: 5.8% v/v (4.5% w/w)
Water: 6 gallons of Hinkley and Schmidt Drinking water.
Grain: 4 lb. German Pilsner
1 lb. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
The German Pilsner is reall a light Biscuit Malt that was not included in the program.
Boil: 60 minutes SG 1.077 4 gallons
3 lb. 4 oz. Light malt extract
1 lb. Wheat extract
Used traditional step mash method.
Hops: 2.08 oz. Saaz (3.75% AA, 60 min.)
2.08 oz. Hallertauer (4.25% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 45 min.)
2.08 oz. Saaz (3.75% AA, 30 min.)
2.08 oz. Tettnanger (4.5% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Used a quart starter of the Wyeast Czech Pilsner yeast that I began 7 days before brewing and allowed to start in my refrigerator at 45 degrees.
Carbonation: 2.5 volumes Keg: 13.3 psi @ 42°F
Tasting: We will see! I anticipate a hoppy slightly sweet (from the wheat exract) light bodied brew.
