I actually calculated the IBU's in the 38 range compared to this program. Also, I needed to add some distilled water to the carboy. I didn't expect such good efficiency. I added enough to bring the gravity down to 1.051.

Type: All grain Size: 5.25 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 43 IBU
OG: 1.057 FG: 1.017
Alcohol: 5.2% v/v (4.1% w/w)
Water: 5 gallons spring H20 and 3 gallons distilled H2O. Added 1/8 tsp CaCl to initial 2.50 gallons mash water. Added 1/16th tsp. to additional 5 qts mash H2O. Added 1/4 tsp. to 4 gallons of sparge H2O.
Grain: 9 lb. German Pilsner
8 oz. German Munich
8 oz. German Crystal-Carafoam
Mash: 80% efficiency
Used a German 2-Mash Decoction from the Brewer's Companion.
Boil: 90 minutes SG 1.046 6.5 gallons
Irish moss at 15 minutes of final boil.
Hops: 2.0 oz. Saaz (3.00% AA, 90 min.)
1.0 oz. Spalt (2.70% AA, 90 min.)
1.0 oz. Saaz (3.00% AA, 45 min.)
.5 oz. Saaz (3.00% AA, 30 min.)
.5 oz. Saaz (3.00% AA, 15 min.)
1.0 oz. Saaz (aroma)
Yeast: Wyeast Bohemian yeast with a starter was used.
Log: 2 day diacytel rest after primary.
Carbonation: bottle w/1.5 cups corn sugar.
Tasting: Will update.
1/29/01: Racked into secondary after 35 days in primary. Man.....does this taste good so far! Going into seconday.
