Alcohol: 4.8% v/v (3.8% w/w)
Grain: 37 lb. German Pilsner
2 lb. Wheat malt
Mash: 80% efficiency
3 dec. mash.pull 6 gallons out at 120,135,158,and boil down to 5 gallons each time. mash for 120 minutes at 158. sparge with 170 water into boil.
Boil: 60 minutes SG 1.046 26 gallons
Hops: 6 oz. Hallertauer (4.25% AA, 60 min.)
4 oz. Spalt (4.00% AA, 40 min.)
3 oz. Hallertauer (4.25% AA, 20 min.)
5 oz. Hallertauer (aroma)
Yeast: white labs pilsner yeast and old bavarian lager yeast.made 2 starters using magnetic stir plate. yeast rockin in 4 hours!!!!!!!!
Log: ferment at 53 for primary 1 week. blow out yeast and ferment at 50 for 2 weeks with a diacetyl rest for 6 days at a raised temp of 65 f. then lager at 40 for 8 weeks.
