Bitterness: 30 IBU
OG: 1.079 FG: 1.012
Alcohol: 8.7% v/v (6.8% w/w)
Water: Carbon filtered water. 1 Tbs Calcium carbonate.
Grain: 17 lb. American 2-row
2 lb. Belgian CaraMunich
Mash: 80% efficiency
Mash at 156° F for 1 hr. Sparge with 156°F water.
Boil: 90 minutes SG 1.070 8 gallons
1 tsp Irish moss.
Hops: 30g Tettnanger (4.5% AA, 90 min.)
30g Willamette (5% AA, 90 min.)
15g Tettnanger (4.5% AA, 30 min.)
15g Willamette (5% AA, 30 min.)
Yeast: Wyeast 1728 Scottish
Log: Ferment at 71°F 2 days, transfer to secondary at 68°F until finished. Chill to 34°F to clear for 2 days and keg.
Carbonation: 2.2 volumes Keg: 6.3 psi @ 34°F
