Bitterness: 26 IBU
OG: 1.072 FG: 1.016
Alcohol: 7.2% v/v (5.7% w/w)
Water: Water profile: Edinburgh - Use water high in calcium, sodium, carbonate, and chloride, but low in sulfate.
Grain: 9.6 lb. Simpsons Golden Promise
.96 lb. Wheat malt
1.2 lb. British crystal 50-60L
.24 lb. Roasted barley
Mash: 80% efficiency
Single infusion batch sparge: Saccharification @ 158*F for 90 minutes. Sparge @ 168*-172*F.
Boil: 90 minutes SG 1.055 6.5 gallons
A longer boil time will result in more caramel character - an important quality in this beer.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 20 min.)
Yeast: Wyeast #1728 Scottish Ale Yeast in 2L starter
Carbonation: 2.0 Vol's CO2. Keg and force carb or use 2.79oz cane sugar in priming solution.
