Holiday Scotch Ale

A rich, malty ale with just the slightest hint of scotish smoke.

Type: All grain Size: 11 gallons
Color:
39 HCU (~19 SRM)
Bitterness: 28 IBU
OG: 1.072 FG: 1.015
Alcohol: 7.3% v/v (5.8% w/w)
Water: Plain, untreated Tap water.
Grain: 20 lb. American 2-row
2 lb. Wheat malt
3 lb. Gambrinus Honey Malt
2 lb. Belgian aromatic
4 oz. Rauch Beechwood Smoked Malt
1 lb. Dextrine malt (Cara-Pils)
6 oz. American chocolate
4 oz. Roasted barley
Mash: 75% efficiency
Target strike in at 130°F,
Rest for 10 min
Recirculate and Ramp up to 158°
(HLT at 180°+)
After 50 min Ramp up to 168° and begin run off.
Sparge at 170° - add cool water to HLT if needed to reduce temp.
Boil: 75 minutes SG 1.059 13.5 gallons
Add Irish Moss at 30 min
Hops: 1 oz. Centennial (9.1% AA, 60 min.)
1 oz. Kent Goldings (6.6% AA, 30 min.)
1 oz. Kent Goldings (6.6% AA, 15 min.)
Yeast: For variations on a theme:
1 carboy with London Ale yeast
1 carboy with European Ale yeast
Carbonation: 1.7 volumes Keg: 1.3 psi @ 34°F
