Starke Sticke

This is this year's christmas beer. It is in the style of a strong
Altbier, called Sticke. It is a bit strong for a true Sticke, but
that's how we like it around christmas.

33 HCU (~16 SRM)
Bitterness: 54 IBU
OG: 1.075 FG: 1.017
Alcohol: 7.5% v/v (5.9% w/w)
Grain: 5 lb. Weyermann Pilsener
5 lb. Weyermann Munich
2 lb. Briess Munich (20L)
1 lb. DWC CaraMunich (75L)
Mash: 78% efficiency
Double Decoction:
-mash in grains with 15qt to protein rest temperature at 132F
-pull 40% thick decoction: 140F(10'), 158F(20'), boil (20')
-add back decoction to raise mash to 152F, rest until converted
-pull 50% thin decoction, boil (5')
-add decoction back to main mash to raise it to 168F, rest 10'
During the mash add boiling water to mash for temperature maintenance
as needed.
Boil: 90 minutes SG 1.058 6.5 gallons
add bittering hops to kettle as soon as possible (first wort hopping)
2 tsp irish moss 20' before the end of the boil
Hops: 2 oz. Mount Hood (4.1% AA, 90 min.)
.5 oz. Hersbrucker (3.9% AA, 90 min.)
.5 oz. Spalter (3.7% AA, 20 min.)
.5 oz. Spalter (aroma)
Yeast: While Labs German Ale/Koelsch (WLP029)
cooled wort was poured onto yeast cake of a previous batch of Alt
Log: brewed on 7/23/98
fermented at 68F-70F
Carbonation: 3/4 cups of corn sugar
