Alaskan Amber Clone

I really enjoy Alaskan Amber Altbier and wanted to make a reasonable
copy of their beer. I visited their web page and found a few
specifics to help me out. This is my second try and I believe it is a
very good copy. I hope you enjoy this beer if any of you try my
recipe. Good Brewing!!

Beer: Alaskan Amber Clone Style: Düsseldorf Altbier
Type: Extract w/grain Size: 5.5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 17 IBU
OG: 1.051 FG: 1.009
Alcohol: 5.4% v/v (4.3% w/w)
Water: I use 5 gals. of Distilled water for the steep and boil and add
1 gal. of cold drinking water at the end of the boil. I do this so
that the differences based on the water are minimal from one batch to
the next.
Grain: .5 lb. Dextrine malt (Cara-Pils)
.5 lb. Raw wheat
Steep: Using 5 gal distilled water steap the wheat and caripils malts for
45 min at 160 - 165°F.
Boil: 60 minutes SG 1.056 5 gallons
6 lb. Williams Brewing German Gold
1 lb. Dutch Light Dry Malt Extract
Add extract and dry malt at the end of the steep. Bring to boil. Add
hops at the times shown. Add three finger pinch of Irish Moss at
10 min. for fining. At the end of the boil add 1 gal cold drinking
water.
Hops: .75 oz. Hallertauer (3.5% AA, 60 min.)
.25 oz. Hallertauer (3.5% AA, 30 min.)
.25 oz. Tettnanger (4.9% AA, 30 min.)
.5 oz. Tettnanger (4.9% AA, 10 min.)
Yeast: White Labs German/Kolsh (WLP029) yeast in 1/2 quart starter. Created the
starter using 1/4 cup DME and White Labs pitchable yeast.
Log: Brewing date: 05-31-00
Racked to secondary: 06-07-00
Kegged: 06-21-00
Carbonation: Pressure carbonated at 40°F with 25 PSI for 3 days. Reduced to tap
pressure.
Tasting: This is a great copy of Alaskan Amber. I compared it to the bottled
version and my version has a little less bite. The hops and overall
flavor of this recipe is VERY close to the tap version of AA. My
color turned out a little (very little) browner than the original. I
also have to work on clarifying. All-in-all this is going to be my
beer of choice for brewing for a while.
