Brewed for the 2009 PA Trout Season Opener spent on Kimberly Run, Somerset PA.

Type: All grain Size: 5.5 gallons

4 HCU (~4 SRM)
Bitterness: 27 IBU
OG: 1.050 FG: 1.007
Alcohol: 5.5% v/v (4.3% w/w)
Water: 1 TBS 5.2 Mash Stabilizer & 1 tsp gypsum for mash.
Grain: 7 lb. German Pilsner
1 lb. Wheat malt
1 lb. German Munich
Mash: 80% efficiency
12 gal (1.3 qt per pound) for 60 min at 153°F (Strike water at 167°F if grain at 65°F). Continuously sparge with 190°F to attain 6.5 gal.
Boil: 90 minutes SG 1.050 5.5 gallons
1 tsp Irish Moss last 15 minutes.
Hops: 1 oz. Saaz (5.8% AA, 90 min.)
.5 oz. Spalt (2.0% AA, 75 min.)
.5 oz. Spalt (2.0% AA, 15 min.)
Yeast: Wyeast 2565 Kolsch smack pack.
