Kolsch for Kirsten

Wonderfull, light, lager-like ale.

Type: Extract w/grain Size: 5.25 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 19 IBU
OG: 1.047 FG: 1.008
Alcohol: 5.1% v/v (4.0% w/w)
Water: Carbon Filter
Grain: 6 oz. German Light Crystal
Steep: Steep grains in 1 qt of water for 30 min, 150F.
Strain water into boil pot.
Boil: 60 minutes SG 1.083 3 gallons
3.3 lb. Extra Light malt extract
3.3 lb. Liquid Wheat extract
1 tsp irish moss at 20 minutes
Hops: 1 oz. Mt. Hood (5% AA, 60 min.)
.5 oz. Willamette (4% AA, 60 min.)
1 oz. Saaz (4% AA, 5 min.)
Yeast: White Labs Kolsch
Log: Brewed 3/11/99. Cooled wort to 130 F with snow bank then added Ice cold water to bring to 5.25 gallons and 68F.
Pitched yeast and fermented at about 65F. Racked 3/15/99, added isinglass. Bottled 3/24/99.
Conditioned 10 days at 66F. Lager 4 weeks 38F.
Carbonation: 2.4 volumes Corn Sugar: 4.05 oz. for 5 gallons @ 66°F
Tasting: The Lager time really helps make this beer smooth.
