Sunnybrook Kolsch

My first Kolsch recipe, bumped up to 10 gallons. Based on reccomendations from Brews and Views forum members.

Beer: Sunnybrook Kolsch Style: Kölsch
Type: All grain Size: 11.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 19 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: Fivestar 5.2 and crushed campden tablets in all brewing water.
Grain: 17 lb. German Pilsner
2 lb. Wheat malt
Mash: 80% efficiency
Single infusion mash at 151F, recirc for 60 minutes. Mashout at 170F.
Fly sparge with 175F water to collect 12 gallons.
Boil: 60 minutes SG 1.043 13.5 gallons
Rehydrated irish moss 10 minutes before flameout.
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Saaz (3.75% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Whitelabs WLP029 - Kolsch, from an active 750ml starter.
Log: Has always turned out to be a crowd-pleaser.
