Sunnybrook Kolsch

My first Kolsch. Based on reccomendations from Brews and Views forum members.

Type: All grain Size: 5.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 15 IBU
OG: 1.051 FG: 1.010
Alcohol: 5.3% v/v (4.1% w/w)
Water: Shoot for ph of 5.2.
Used Five-Star 5.2... seemed to work well according to the ph test strips.
Grain: 10 lb. German Pilsner
1 lb. Wheat malt
Mash: 67% efficiency
Add 3.75 gallons of water for a single infusion mash at 151F. Recirculate to hold temp, then mashout at 170F. Fly sparge with 3.5 gallons at 175F.
Boil: 60 minutes SG 1.043 6.5 gallons
Rehydrated irish moss 10 minutes before flameout.
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
.2 oz. Saaz (3.75% AA, 15 min.)
.2 oz. Saaz (aroma)
Yeast: Whitelabs WLP029 - Kolsch, from a 750ml starter.
Log: My effeciency has been low in the past, so I have quite a bit of grain in this batch. Eff jumped to 67% this time (up from 47%). Unfoitunately, there was an air leak somewhere in my klettle fittings, so some air was whipped into the hot wort before chilling... probably gonna have some big time HSA.
