Day Light Savings Kolsch

Our first all-grain attempt. We intend to pitch this on top of a partial mash yeast bed that we just racked to the secondary. A hint of Juniper Berries will accent this dry brew.

5 HCU (~5 SRM)
Bitterness: 51 IBU
OG: 1.048 FG: 1.008
Alcohol: 5.1% v/v (4.0% w/w)
Water: Hinkley and Schmidt
Grain: 8 lb. American 2-row
2 lb. Wheat malt
1 lb. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
Mash: 65% efficiency
Batch Sparge with no protien rest. Mashed for 120 minutes.
Boil: 60 minutes SG 1.041 7 gallons
Added 1 ounce of juniper berries to boil with 15 minutes remaing. Irish Moss at 15 minutes also.
Hops: 1 oz. Hallertauer Mittelfruh (6% AA, 60 min.)
.5 oz. Cascade (6% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast German Kolsch from a previoous batch
