Water: 1 ml lactic acid, 1/2g.(1/8tsp) of gypsum per 3 gal.
Grain: 8 lb. American 2-row
2 oz. Homemade Amber 2-row 35L
4 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Mash: 90% efficiency
Rest @ 125F for 30 min. (3 gal)
Rest @ 158F for 60 min.
Started sparge @ 160F. Ran for 75 min - 5.0 gal sparge water volume.
Collected 7.5 gal for boil.
Boil: 75 minutes SG 1.039 7.5 gallons
Homemade Amber Malt made by toasting 2 row for 10 min. @ 360F.
Hops: .5 oz. Tettang (3.8% AA, 60 min.)
.5 oz. Northern Brewer (7.5% AA, 60 min.)
.5 oz. Tettang (3.8% AA, 45 min.)
Yeast: Wyeast 2272 North American from 1pt. starter.
Log: Dropped temp to 52F on 11/03/97. Started to consume it after 4 wks.

Carbonation: Artificial
Tasting: Comparable to a Molson or Moosehead in both taste & color.
