Wild Horse Lager

The Wild Horse River in the south-east corner of British Columbia had its own gold rush in 1864. Eventually Fort Steele was established nearby and by the late 1800's it had its own brewery. I imagine the brewer, of German descent, would have made beer in the California Common style.

Alcohol: 4.0% v/v (3.2% w/w)
Grain: 8.06 lb. American 2-row
1 lb. 4 oz. American crystal 20L
Mash: 90% efficiency
Mash in with 12.4 Q at a strike heat of 169. At start of mash (in round Gott cooler with Phil's Phalse bottom) temperature 148. By end of 2 hour mash temperature 150.
Boil: 60 minutes SG 1.044 6.94 gallons
Irish moss with 10 minutes remaining in boil
Hops: .75 oz. Northern Brewer (9.2% AA, 60 min.)
.5 oz. Cascade (5.2% AA, 20 min.)
.75 oz. Northern Brewer (9.2% AA, 10 min.)
Yeast: Wyeast 2112 (California Lager yeast) no starter. Very strong fermentation (blew top off on second day).
Log: Ferment at 62
Carbonation: dry extract 1 1/4 cup
Tasting: -slight chill haze
-great head retention
-bitterness initially perceived then smooth going down
-carbonation level perfect
-a good beer
