Dog Walker Steam Ale

All Grain Batch #17 - 03/20/05.

Bitterness: 31 IBU
OG: 1.044 FG: 1.010
Alcohol: 4.3% v/v (3.4% w/w)
Water: Longmont, CO tap water.
Grain: 7.0 lb. American 2-row
0.5 lb. Belgian aromatic
0.5 lb. Belgian biscuit
0.5 lb. American crystal 15L
13 oz. Flaked rye
Mash: 64% efficiency
11 qts @ 178°F. 90 minute mash @ 158°F.
Sparge with 5 gallons @ 175°F.
Boil: 60 minutes SG 1.031 7.0 gallons
0.3 oz Irish Moss @ 15 min.
Hops: 0.5 oz. Centennial (9.1% AA, 60 min.)
0.5 oz. Centennial (9.1% AA, 15 min.)
1.0 oz. Centennial (aroma)
Yeast: 14 gr Yeast Lab European Lager.
Rehydrated with 3 Tbs Corn Sugar & 2 cups warm water.
The Lager yeast just didn't start fast enough for my liking,
so I grabbed a couple packs of generic Ale yeast, rehydrated
and pitched them also.
Log: Primary, 6.5 gal glass carboy, 6~7 days @ ~68°F.
Secondary, 5 gal glass carboy, 1 week~@ ~68°F.
Carbonation: 2.4 volumes Keg: 8.2 psi @ 34°F
Keg It, Cool It & CO2 It!
Tasting: First taste before carbonating has a sour tang.
