Patriot Lager-Sammy A clone

Beer: Patriot Lager-Sammy A clone Style: American Premium Lager
Type: Extract w/grain Size: 5.0 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 22 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.9% v/v (3.9% w/w)
Water: Use gallon jugs of spring water from supermarket. Add 1 oz of gypsum prior to boil.
Grain: 1 lb. German crystal 40L
Steep: Steep, 1# crystal malt at 160 degrees, 1 hour in 1.5 gallon spring water sparge grains in .5 gallon of spring water.
Boil: 60 minutes SG 1.101 2.5 gallons
4 lb. Coopers Ale Kit
2 lb. Amber dry malt extract
1 oz of yeastex at start of boil with 3 oz maltose dextrin, Irish moss at 15 minutes,
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: Pitch 1 packet of Wyeast European Lager-pop seal two days in advance, bring 1/2 cup of spring water to boil add 2 tbls of amber dme bring to boil chill to 75 degrees, add wyeast packet to mixed 2 hours prior to final wort.
Log: Ferment 1 day at 65 degrees, move to 55 degrees from day 2 to 4, add to secondary on 4th day, ferment 10-17 days more at 55 degrees.
Carbonation: 5/8 cup of corn sugar, boiled in 1 pint of spring water. Add during racking to bottling vessel.
Tasting: In secondary fementation as of 11/23. Bottled 12/13 fg 1.010.
