Alcohol: 5.3% v/v (4.1% w/w)
Water: Filtered Water
Grain: 12 lb. American 2-row
3 lb. German Vienna
1 lb. British crystal 50-60L
4 oz. British chocolate
Mash: 85% efficiency
Protein Rest at 122° for 30 minutes, then 150° for 60 minutes. Mash out at 168°
Boil: 90 minutes SG 1.042 12 gallons
add Irish moss the last 10 minutes of the boil
Hops: 1 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
1.5 oz. Tettnanger (4.5% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: Starter used, Wyeast's 2124 Bohemian Lager yeast
Log: 7 days in primary, then rack to secondary until fermentation is complete.
Carbonation: 2.6 volumes Keg: 33.5 psi @ 75°F
