Liquid Gold

Seemed like a good idea. The lagering method seems a little cockamamy but it paid off, this is a nice tasting brew.

Color:
8 HCU (~6 SRM)
Bitterness: 20 IBU
OG: 1.047 FG: 1.008
Alcohol: 5.0% v/v (4.0% w/w)
Water: Boiled tap water
Grain: 1 lb. Dextrine malt (Cara-Pils)
Boil: 60 minutes SG 1.094 2.5 gallons
6 lb. Light malt extract
Steep the carapils in water that is braught to a boil over about 30 minutes. On my stove top i clicked one setting higher every 5 minutes. Once the water is vboiling pull the grains, then add your malt and hops. BUT only boil 5.75lb of extract at this time.
Hops: 1 oz. Spalt (6.75% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 20 min.)
.5 oz. Tettnanger (4.5% AA, 7 min.)
Yeast: wyeast #2035 American Lager. Pitch the yeast 24 hours in advance into a .5 gallon/.25lb extract mixture that has vbeen vboiled and cooled to 73°.
Log: Pitch yeast into mixture at 73°. Over the next twelve hours lower temp to 53°. Leave for 10 days. Bring back to 73° over next four days. Rack once fermentation has subsided, then drop to 45° over the next 5 days. Leave for 20 days. Bring back to 73° over next 2 days.
Carbonation: 2.6 volumes Honey: 5.01 oz. for 5 gallons @ 55°F
Prime and store at room temperature. Once chilled again don't allow to warm up again.
Tasting: Serve around 50°
