WTB Hearty Lager

This was my first lager attempt. I brewed it for my father Wes who wanted a lager better than store bought. My brother Chris and I who have created many ales thought it turned out BEAUTIFULLY! P.S. The color came out lighter after I added the pre-boiled water to top off 5 gallon batch.

33 HCU (~16 SRM)
Bitterness: 23 IBU
OG: 1.058 FG: 1.019
Alcohol: 5.1% v/v (4.0% w/w)
Water: I used store bought drinking water. I used 3 gallons for the boil and boiled an additional 3 (just to make sure) to top off the 5 gallon batch.
Grain: 10 oz. Caramel 60L
5.5 oz. Dextrine malt (Cara-Pils)
10 oz. CaraMunich II
Steep: I steeped all the grains for 1 hour at 165-170 degrees F.
Boil: 60 minutes SG 1.097 3 gallons
6 lb. Gold dry malt extract
At 15 minutes remaining I added 1 tsp rehydrated irish moss.
Hops: 2 oz. Fuggles (4% AA, 60 min.)
1 oz. Cascade (4% AA, 10 min.)
1 oz. Cascade (4% AA, 5 min.)
Yeast: I pitched American Lager Wyeast 2035 at 70 degrees F. Then brought wort down to 51 degrees F for fermentation.
Log: 7 days in the primary then racked to secondary and let sit for 4 weeks at 51 degrees F after which I bottled it.
Carbonation: I carbonated with 1/3 cup light DME.
Tasting: After 2 weeks in the bottle it tasted very good. After 4 weeks it was PERFECT. A true success, wouldn't change a thing.
