and is targeted to replicate Paulaner Salvator

48 HCU (~21 SRM)
Bitterness: 27 IBU
OG: 1.083 FG: 1.025
Alcohol: 7.4% v/v (5.8% w/w)
Water: 1 Tsp of Gypsum added to mash to harden water (target PH 5.2 - 5.3)
Grain: 1 lb. Belgian pale
1 lb. German Pilsner
.5 lb. German Vienna
.5 lb. German Munich
.3 lb. British chocolate
.5 lb. Belgian biscuit
.5 lb. Dextrine malt (Cara-Pils)
.5 lb. American crystal 40L
Steep: Steep grains for 60 minutes at 150 deg F
Boil: 90 minutes SG 1.059 7 gallons
2 lb. Light dry malt extract
7 lb. Light malt extract
1 tsp Irish Moss and package of yeast nutrient
added last 10 minutes of boil.
Hops: .5 oz. Northern Brewer (7.0% AA, 60 min.)
.5 oz. Northern Brewer (7.0% AA, 45 min.)
.5 oz. Hallertauer (4.0% AA, 15 min.)
Yeast: WLP833 German Bock Lager Yeast
Log: Primary ferment 50 deg F
After Kraeusen head falls, lower temp (5F/day) to 40F
Raise temp for 52F diacetyl rest, 1 week
Lager in secondary at 36F for 2 months
Carbonation: Prime with DME
