Alcohol: 7.8% v/v (6.1% w/w)
Water: Use 4 gallons bottled drinking water for mash.
Use 8.25 gallons bottled drinking water for sparge.
Grain: 9 lb. American 2-row
2 lb. British pale
2 lb. American Munich
8 oz. Belgian aromatic
8 oz. Belgian CaraMunich
8 oz. Belgian CaraVienne
Mash: 80% efficiency
Grist ratio: 1.1 qt/lb
Heat 4 gallons mash water to 166°F.
Add grains and maintain temperature of 153°F for 60 minute rest.
Heat mash to 168°F for 10 minute rest to mashout.
Boil: 120 minutes SG 1.047 9.0 gallons
Add 1 tsp. rehydrated Irish moss at 20 minutes remaining.
Hops: 1 oz. Hallertauer (7.1% AA, 90 min.)
0.25 oz. Saaz (2.8% AA, 90 min.)
0.75 oz. Saaz (2.8% AA, 20 min.)
Yeast: Make 1/4 gallon starter at 1.040 gravity using light DME several days in advance.
Pitch White Labs WLP820 Octoberfest/Märzen Lager Yeast.
Log: Start fermentation at 60°F for 24 hours.
Ferment in primary at 54°F for 3 weeks.
Transfer to secondary and rest at 60°F for 1 day.
Ferment in secondary at 45°F 1 week.
Gradually lower temperature and lager at 35°F for 7 months.
Carbonation: 2.5 volumes Keg: 9.7 psi @ 35°F
