Bitterness: 19 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 2.75 lb. German Pilsner
4 oz. German Munich
4 oz. German Light crystal
6 oz. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Mash at 190°F for 90 minutes.
Boil: 60 minutes SG 1.091 3 gallons
4 lb. Extra-Light dry malt extract
Add 1 tsp. Irish Moss after 45 minutes of boiling.
DME added during last 5 minutes of boil along with 4 oz. maltodextrin, after aroma hops.
Hops: 1 oz. Northern Brewer (6.5% AA, 60 min.)
.5 oz. Spalt (6.75% AA, 15 min.)
.25 oz. Tettnanger (aroma)
Yeast: Wyeast 2206 Bavarian lager yeast, 2L starter
Log: Ferment at 40-52°F until fermentation slows (5-7 days), rack to secondary for 2 weeks at around 40°F.
Carbonation: Batch prime with 3/4 cup corn sugar.
