Alcohol: 5.3% v/v (4.2% w/w)
Water: Use filtered water
Grain: 16 lb. American 2-row
1 lb. American crystal 60L
Mash: 85% efficiency
100° Acid rest for 10 minutes, a protein rest at 122° for 20 minutes, then 150° for 30 minutes or until coversion is complete. Mash out at 168° .
Boil: 90 minutes SG 1.044 12 gallons
Add Irish moss in the last 15 minutes of the boil
Hops: 2.75 oz. Tettnanger (4.5% AA, 60 min.)
1 oz. Hallertauer Mittelfruh (5% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
.5 oz. Hallertauer Mittelfruh (aroma)
Yeast: Wyeast's 2206 Barvatian Lager Yeast, use a starter
Log: Dry hopp using 1/2 oz of Hallertauer Mittelfruh in the secondary fermentor.
Tasting: After fermentation is complete I recommend chilling the beer to 34° for 24 hours then filtering it to avoid a chill haze. this recipe turns out great, and if you filter it, it will be as brillant and bright as any commercially available micro brew beer.
