Grandpop's Lawnmower Beer

Interpretation of a Pre-prohibition Classic American Pilsener. The kind of beer that your grandpop (or great grandpop!) used to drink.

Type: All grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 36 IBU
OG: 1.061 FG: 1.013
Alcohol: 6.2% v/v (4.9% w/w)
Water: Carbon Filtered H2O
Grain: 9 lb. American 6-row
3 lb. Flaked corn
Mash: 70% efficiency
Mash in at 122°F using 12 quarts water and hold for 30 minute protein rest. Raise temp to 150°F and hold for 60 minutes for saccharification. Sparge
Boil: 90 minutes SG 1.047 6.5 gallons
boil 90 minutes total to drive off volatile aromatics and DMS precursors (first hop addition with 60 minutes remaining). Add 1.5 tsp. Irish Moss last 20 minutes. Cool to 55°F within <20 minutes after boil is completed.
Hops: 1.5 oz. Cluster (whole hops) (5% AA, 60 min.)
.5 oz. Cluster (whole hops) (5% AA, 5 min.)
Yeast: 1 quart American Lager yeast slurry.
Log: Oxygenate to ~8ppm O2 using Oxygen stone. Ferment 2-3 weeks at 55°F or until bubbling slows. Raise to 68°F for Diacetyl rest, 2 days. Drop by 1° per day until reaching 32°F and hold for 4 weeks.
Carbonation: Force carbonate to 2.75 volumes in keg.
Tasting: This beer has not been brewed, but may be at some time in the future. Drop me a line if you actually brew it before I do!
