Batch sparging used. 25% added to grain bill to compensate for reduced efficiency. Easiest way to all grain!!
22 quarts strike water at 168 deg. Mash settled at 153 deg
Approx. 3.25 gallons absorbed
Sparge with 4.75 gallons water at 180 deg to achieve 7 gallon boil.
Boil: 90 minutes SG 1.040 7 gallons
Add bittering hops after 30 minute boil. Flavor hops added after 60 minute boil. Aroma hops and 1 tsp irish moss added after 75 minute boil.
Hops: .5 oz. Northern Brewer (7.5% AA, 60 min.)
.25 oz. Perle (7% AA, 30 min.)
.25 oz. Saaz (4.4% AA, 30 min.)
.25 oz. Saaz (4.4% AA, 15 min.)
Yeast: Prepared a 2 quart starter using White Labs WLP-810 (San Francisco Lager Yeast) pitchable vial.
Log: Fermentation temperature 62 deg.
Rack to secondary once fermentation has stopped, about 7 days.

Carbonation: Keg at 10-13 psi.
