5 lb. American 6-row
2 lb. Flaked corn
Mash: 85% efficiency
mash grain in 12 qt. water 122 deg. for 30 min; add 8 qt. 170 deg. and enough bottom heat to get to 150 deg hold 1 hr, raise to 158 hold 1 hr, mash out at 170 for 10 min. sparge into brewpot w/ 4 gal water keeping grain bed at 140 (~180 deg water)
Boil: 60 minutes SG 1.058 7 gallons
1 lb. Rice extract
add rice syrup solids at 45 min (15 min remaining)
Hops: 1 oz. Cascade (7% AA, 60 min.)
.75 oz. Saaz (3.4% AA, 15 min.)
Yeast: Munton & Fison dry ale yeast when cooled to 70 deg.
Log: just started this last weekend, going like crazy in the primary... don't know exactly what style this is, pilsener looked the closest.
Carbonation: use 3/4 cup corn sugar at bottling
