Water: all water is RO
Grain: 28 lb. German Pilsner
1 lb. Belgian Munich
.5 lb. German crystal 20L
.5 lb. American crystal 20L
Mash: 72% efficiency
Doughed in at 115 degrees for 30 min. acid rest at 108 degrees,
Decoction to raise to 122 degrees for a 30 min. protein rest.
Second decoction to raise to 149 degrees sacrification rest for
1 hour, Wort ended at 1.090 @ 9 gal.after sparging w/ 2 gal.of 168
degree RO water. Added 5 gal. of RO to drop to 1.050 in boiler. Origional gravity 1.060 @ 11 gal.
Boil: 90 minutes SG 1.055 15 gallons
1 Tablespoon Irish moss last 15 min.
Hops: 6 oz. Saaz (3.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 30 min.)
1 oz. Saaz (3.75% AA, 15 min.)
Yeast: White Labs #WLP 830 German Lager from starter. Positive pressure
in carboy in 5 hrs.
Log: Dry hop w/ 1 oz. Saaz in secondary.
Carbonation: Force carbonate in keg.
