Type: Extract Size: 5.25 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 20 IBU
OG: 1.051 FG: 1.013
Alcohol: 4.9% v/v (3.9% w/w)
Water: use store bought drinking water (carbon filtered, ozonated, but not distilled - some minerals should be good for the beer)
Grain: 2 lb. German Pilsner
6 oz. American Vienna
10 oz. Dextrine malt (Cara-Pils)
Steep: Steep grains in 2 gal. of 152deg F water for 30 minutes. Sparge w/ 1/2 gallon of water.
Boil: 60 minutes SG 1.108 2.5 gallons
2 lb. M&F Extra Light dry malt extract
3 lb. Laaglander Extra Light dry malt extract
a tsp of irish moss used at the end (boil for 10 min.)

save 1/2 oz. of Saaz for aroma/dryhopping
Hops: 2 1/2 oz. Saaz (3% AA, 60 min.)
1 oz. Saaz (3% AA, 30 min.)
1/2 oz. Saaz (3% AA, 5 min.)
1/2 oz. Saaz (aroma)
Yeast: White Labs Pilsener Lager Yeast - WLP800
Log: after primary, dryhop w/ remaining 1/2 oz. of Saaz for one week. After that, add Gelatin Finings to clarify.

Bottle after another week and store cold - lager for at least 2 or 3 more weeks.
Carbonation: prime w/ 4 oz. priming sugar (dextrose)
