Alcohol: 5.2% v/v (4.0% w/w)
Water: Use filtered tap water
Grain: 22 lb. Czech Moravian 2-rowPilsner
1.5 lb. Czech Moravian crystal ( 10L)
12 oz. Dextrine malt (Cara-Pils)
Mash: 78% efficiency
3 step mash, 34 qts.water with strike temp at 132° hold 20 min. at 122°, raise to 154° for 50 min. mash out at 170° for 10 min.Sparge with 170° water for a total of 13.75 gallons hot wort.

Boil: 70 minutes SG 1.051 13.75 gallons
Add hops as noted and Irish moss last 15 min. of boil.
Hops: 1.25 oz. Hallertauer (3.9% AA, 70 min.)
1 oz. Saaz (3.4% AA, 70 min.)
1.25 oz. Saaz (3.7% AA, 70 min.)
1 oz. Saaz (3.4% AA, 45 min.)
.75 oz. Saaz (3.7% AA, 45 min.)
1.5 oz. Hallertauer (3.9% AA, 30 min.)
1.5 oz. Saaz (3.4% AA, 10 min.)
1 oz. Saaz (aroma)
Yeast: White Labs #WLP800 Pilsner lager (make 48-64 oz. starter)
Log: First 24 hrs. at 60 deg. Lower to 54 deg. for 12-16 days, transfer to secondary hold at 60 deg.for 24hrs. and return to lower temp.for 21-25 days.keg and age 4-6 weeks, chill to 42 deg. befor carbonation.
Carbonation: 2.4 volumes Keg: 12.2 psi @ 42°F
