After the Hunt Lager

this lager was brewed on 10/12/02. bow hunting season in mass. begins on 10/14/02. hopefully this lager will be ready to serve at christmas time with a great venison stew and some hard rolls.

Alcohol: 5.4% v/v (4.2% w/w)
Water: 1tesp gypsum
Grain: 10 lb. German Pilsner
1 lb. American crystal 20L
2 oz. Roasted barley
Mash: 75% efficiency
122F for 15 mins[protein rest].143f. for 90mins. sparge with 4gals. @174f. to gain 6.6gals.
Boil: 70 minutes SG 1.048 6.5 gallons
1tesp irish moss at 20mins.
Hops: 1.25 oz. Tettnanger (4.5% AA, 60 min.)
1.25 oz. Tettnanger (4.5% AA, 45 min.)
1.25 oz. Saaz (3.75% AA, 30 min.)
1.25 oz. Saaz (aroma)
Yeast: wlp830 german lager yeast
Log: 2 days@68f. 1 week @40f. rack and lager 2 and 1 half months @35f.
Carbonation: kegged and serve @ 10 psi
Tasting: will update 2 weeks before christmas 02.
