Brown Cherry Buster

A dark colored ale with a lighter flavor and a rich cherry aroma and thick head.

Type: Extract w/grain Size: 5.5 gallons
Color:
52 HCU (~23 SRM)
Bitterness: 27 IBU
OG: 1.051 FG: 1.015
Alcohol: 4.7% v/v (3.7% w/w)
Water: 4 tsp Gypsum during the boil
Grain: 1 lb. American crystal 20L
.5 lb. Dextrine malt (Cara-Pils)
.5 lb. Dehusked black patent
Steep: Place specialty grains in 150-160°F water and steep for 20 minutes.
Boil: 60 minutes SG 1.070 4 gallons
7 lb. Light malt extract
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 5 min.)
Yeast: White Labs California Ale.
Could substitute Wyeast American Ale II.
Log: 3lb can of Oregon Cherry Puree added during the secondary fermentation stage.
4 oz bottle of cherry flavor(Carson) added at bottling.
Carbonation: 3/4 cup corn sugar added at bottling.
Tasting: Next time I would add only 1/4 lb of black patent grain. I only added this for color.
