Steep: STEEP GRAINS @ 155 FOR 45 MIN.REMOVE AND SPARGE WITH 1 GAL.
170 WATER. START BOIL.
Boil: 75 minutes SG 1.140 2.0 gallons
2 lb. Honey
3 lb. Amber dry malt extract
1 TSP IRISH MOSS 15 MIN. BEFORE END OF BOIL.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
0.50 oz. Galena (13% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 30 min.)
0.50 oz. Liberty (4% AA, 15 min.)
1 oz. Mt. Hood (aroma)
Yeast: 1272 WYEAST STARTED IN 1 QT AND FINISHING TO 1 GAL OVER 10
DAY PERIOD.
Carbonation: 2.0 volumes Dried Malt Extract: 5.40 oz. for 5 gallons @ 70°F
