Baby Cub Brown

The hops are what make this beer. There is no subsitute for Magnum. For the Vanguard you might try Crystal, Ultra, or any of the US grown Hallertau clones.

OG: 1.054 FG: 1.010
Alcohol: 5.6% v/v (4.4% w/w)
Water: Carbon filter water. Added 1tsp. Gypsum per gallon of water. Used acidulated malt for ph correction.
Grain: 23 lb. American 2-row
12 oz. Belgian CaraMunich
8 oz. British chocolate
Mash: 75% efficiency
Single infusion @152 till conversion.
Mash out @168.
Sparge @168.
Boil: 90 minutes SG 1.048 14 gallons
1 tblsp. Irish moss last 15min.
Hops: 1 oz. Magnum (16% AA, 60 min.)
1 oz. Magnum (16% AA, 30 min.)
.4 oz. Magnum (16% AA, 15 min.)
2 oz. Vanguard (4.5% AA, 15 min.)
2 oz. Vanguard (4.5% AA, 5 min.)
4 oz. Vanguard (aroma)
Yeast: 1056 repitched from a pale ale.
Log: Ferment @68 and rack to a secondary after primary fermentation. Rack to a keg when clear.
Carbonation: Force carbonate to 2.2 volumes
