Water: Add a teaspoon or so of gypsum if you like.
Grain: 10.6 lb. British pale
2.17 lb. British crystal 50-60L
1.00 oz. American Black Patent
Mash: 85% efficiency
Mash grains for the typical 60 minutes @ 156° F.
Boil: 60 minutes SG 1.048 12 gallons
5.66 lb. Maple Syrup
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 2.69 oz. Cascade (6% AA, 60 min.)
2.00 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast #1084 Irish Ale
Carbonation: 2.2 volumes Keg: 10.0 psi @ 42°F
Force carbonate in a keg.
