Momma Braun Brown Ale

This is the second time I have brewed this particular recipe. This is also the first recipe I formulated by myself. I think this is an American Brown, but I could be wrong...whatever it is the first one was good. I changed my original recipe slightly from using corn sugar to bring the OG up to where I wanted it to using light brown sugar, I also upped the Crystal to 1 pound from 1/2 pound. The recipe I wrote called for 8 oz of the sugar, but I over packed the cup and ended up with about 12 oz instead. Just remember this is for 2.5 US gallons.

Brewer: Jeremy S Email: -
Beer: Momma Braun Brown Ale Style: American Brown
Type: Extract w/grain Size: 2.5 gallons
Color:
40 HCU (~19 SRM)
Bitterness: 24 IBU
OG: 1.055 FG: 1.017
Alcohol: 4.9% v/v (3.8% w/w)
Water: Used bottled spring water.
Grain: 1 lb. American crystal 40L
Steep: Steeped the Crystal 40 at 155° for 30 min. Also did a sort of FWH while steeping with about 1/2 oz Cascade @ 5.9% AA.

Edit:1/2 oz of hops is too bitter, drop to 1/4 oz or leave out completely
Boil: 60 minutes SG 1.046 3 gallons
2 lb. Amber dry malt extract
12 oz. Brown sugar
Added 1/2 Whirl-floc at 15 min
Hops: 0.25 oz. Cascade (5.9% AA, 60 min.)
0.25 oz. Cascade (5.9% AA, 30 min.)
0.25 oz. Willamette (4.3% AA, 15 min.)
0.25 oz. Willamette (4.3% AA, 5 min.)
Yeast: Rehydrated Windsor
Log: Brew date 12/15/03; Expected secondary date 12/19/03; Expected bottle date 12/23/03...Want this for new years eve and the first batch went from brew to bottle in 10 days with an acceptable carb level by day 14, by acceptable I mean it gave a decent head that lasted quite a while.
Carbonation: Expect to prime with 4-5 Prime-Tabs per bottle. I figure about 2 volumes of CO2...maybe slightly more.
Tasting: Just brewed it...very bitter-sweet. Expected ABV is around 5.5%...add more sugar and you have a Daddy Braun, less and you have Baby Braun, but if you add more sugar you will need to add somthing to make up for the lost body.
