Grain: 10 lb. 12 oz. American 2-row
8 oz. American crystal 60L
8 oz. Crisp - British Pale Chocolate
4 oz. Weyerman - Melanoidin Malt
4 oz. Weyerman - German Carafa I (dehusked)
Mash: 70% efficiency
Single infusion mash at 155° F. Total conversion in less than 30 minutes, started sparging at 45 minutes.
Boil: minutes SG 1.048 6.5 gallons
Hops: 2 oz. Fuggles (4.4% AA, 60 min.)
1 oz. Fuggles (4.4% AA, 15 min.)
2 oz. Fuggles (aroma)
Yeast: White Labs Dry English Ale Yeast
Log: The 2 oz of Fuggles aroma are dryhopped in the secondary for seven days.
Carbonation: Force carbonated in the keg to about 2.0-2.5 volumes - I prefer the beer with lower carbonation.
Tasting: Best served at cellar temperature - at colder temps, the hop aroma was somewhat suppressed. Next time, I might brew a lower-alcohol version that I can enjoy in larger quanities (meta-style be damned).
