Bitterness: 19 IBU
OG: 1.057 FG: 1.014
Alcohol: 5.5% v/v (4.3% w/w)
Water: All 19 gal is RO, no water treatment.
Grain: 27 lb. Belgian pale
3.5 lb. American crystal 60L
.5 lb. British chocolate
1 lb. Cara Foam
Mash: 65% efficiency
Dough in @ 135degF to rest @ 123degF for 30 min. Decoction mash to raise to 153degF for 1 hour. Sparge @ 168 degF
Boil: 60 minutes SG 1.046 16 gallons
All spices added to last 10 min of boil.
1 tsp corriander
1 tsp cardamom
1 tsp powdered nutmeg
1 tsp whole cloves
1 3" cinnamon stick
1 oz Dried Bitter Orange Peel
2 tsp Irish Moss Flakes
Hops: 2 oz. Kent Goldings (4.5% AA, 60 min.)
1 oz. Kent Goldings (6.6% AA, 30 min.)
Yeast: 1 gal starter of White Labs WLP023 Burton Ale Yeast
Carbonation: 2.0 volumes Corn Sugar: 1.45 oz. for 5 gallons @ 40°F
Will bottle 5 gal for presents & keg the rest.
