Mr. Mayor's Holiday Ale

Modification of an earlier English Brown (should show up as 'Hermione Brown') for use as holiday brew. Haven't made it yet, but as you see it is how it will be made.

Beer: Mr. Mayor's Holiday Ale Style: English Brown
Type: Extract w/grain Size: 5 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 14 IBU
OG: 1.045 FG: 1.014
Alcohol: 4.0% v/v (3.1% w/w)
Grain: 4 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
4 oz. Belgian Special B
2 oz. American chocolate
Steep: 155 degree steeping. You know the drill.
Boil: minutes SG 1.056 4 gallons
3 lb. 8 oz. Light malt extract
1 lb. 8 oz. Light dry malt extract
6 oz. Molasses
Hops: .5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 30 min.)
Yeast: Any good English Ale Yeast.
Log: For lack of a better place, here's a few notes on the hops and the spicing. Noting 1/2 oz. of hops at each addition is based on 5.5% AA levels. A tea will be made consisting of:

1 tsp. Allspice
1/2 tsp. Ground Clove
2 sticks cinnamon
2 cardamom seeds
1 grated orange peel (watch out for the pith!)

A little strong? So what. This is my beer. You go make your own.
Carbonation: Bottle carbonated. Add priming sugar to tea made above.
