I tried to make a Big Red Ale, but addding the Chocolate Malt got the better of me Oops..

Bitterness: 27 IBU
OG: 1.052 FG: 1.072
Alcohol: -
Water: Gypsum with the mash, and Gypsum with the sparge water. 1tsp to each.
Grain: 4kg 500g British lager
300g Dextrine malt (Cara-Pils)
150g British crystal 95-115L
50g British chocolate
50g Roasted barley
250g Raw wheat
Mash: 70% efficiency
two stage step mash, 57 degrees for 30 min then 66 degrees for 60 minutes
Boil: 75 minutes SG 1.041 28 liters
Whirlfloc P added for the last 20 minutes of the boil.
Hops: 21g Target (10% AA, 60 min.)
15g Goldings (3.4% AA, 15 min.)
15g Goldings (aroma)
Yeast: Whitelabs Burton Ale Yeast, recultured from a previous full wort cluture.

Carbonation: This will be Kegged.
