Ol Dirty Bastard

A very nice ESB, on the high side of Bitterness, but the Victory malt,
and fresh Hugh Baird malt, accentuate the Malt Profile. A very good Beer, Deceptively Strong.

Bitterness: 57 IBU
OG: 1.063 FG: 1.011
Alcohol: 6.7% v/v (5.3% w/w)
Water: Carbon Filter to remove Chlorine
Grain: 9 lb. British pale
8 oz. American victory
4 oz. Belgian Special B
1 lb. British crystal 50-60L
Mash: 79% efficiency
straight infusion mash at 153° to 156° for 90 minutes, raise to 170° for ten minutes for mash_out
Boil: 75 minutes SG 1.053 6 gallons
Irish Moss 1 tsp rehyderated in 1/4 cup water last 15 mins of boil
Hops: 1 oz. Wye Target (10% AA, 60 min.)
.5 oz. Kent Goldings (5.2% AA, 45 min.)
.5 oz. Kent Goldings (5.2% AA, 30 min.)
1 oz. Kent Goldings (5.2% AA, 15 min.)
Yeast: Brew Tek British Draft Ale in 600mL starter
Carbonation: 1/4 cup corn sugar in keg
Tasting: Very nice ESB high on bitterness, But nice. I would cut the Target
hops back to 3/4 oz next time and target for about 45 IBU's otherwise
perfect, priming with 1/4 cup corn sugar, and serving this at 48°
Makes this pretty close to the real thing.
