ok here is another one from the mind of the mad brewer know only as the gnome...... enjoy.

Beer: Damn Yankies Style: English Strong (Extra Special) Bitter
Type: Extract w/grain Size: 5 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 55 IBU
OG: 1.051 FG: 1.012
Alcohol: 5.0% v/v (3.9% w/w)
Water: none
Grain: 1 lb. British crystal 50-60L
Steep: a good half hour at 160.
Boil: 60 minutes SG 1.127 2 gallons
3 lb. 4 oz. Light malt extract
3 lb. 4 oz. Amber malt extract
add your malt to your wort from your grains boil for an hour.
Hops: 1 oz. Cluster (7% AA, 60 min.)
2 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Cluster (7% AA, 30 min.)
2 oz. Fuggles (4.75% AA, 30 min.)
.5 oz. Cluster (aroma)
1 oz. Fuggles (aroma)
Yeast: english ale yeast should do the trick
Log: keep it about 65 70 degrees for a week add oak chips if you would like. rack to secondary keep at the same temp for about two weeks or longer if you would like.
Carbonation: 1.3 volumes Corn Sugar: 1.06 oz. for 5 gallons @ 65°F
