Bitterness: 36 IBU
OG: 1.058 FG: 1.015
Alcohol: 5.6% v/v (4.4% w/w)
Water: Use purchased water
Grain: 3 lb. Floor Malted Maris Otter
8 oz. Belgian Biscuit
4 oz. Belgian Special B
8 oz. British Crystal 50-60L
4 oz. Wheat Malt
4 oz. Special Roast Malt
Mash: 75% efficiency
Mash at 152°F for 60 minutes at 1.25 quarts per pound or 1.5 gallons. Wash in 170°F water, 2.5 gallons. Combine wort for a 4.25 gallon boil volume.
Boil: 60 minutes SG 1.073 4 gallons
3.15 lb. Light malt extract
1 lb. Light dry malt extract
1 teaspoon Irish Moss at 30 minutes.
Hops: 1 oz. Kent Goldings (5.8% AA, 60 min.)
1 oz. U.S. Goldings (5.7% AA, 60 min.)
0.5 oz. Kent Goldings (5.8% AA, 15 min.)
0.5 oz. Kent Goldings (aroma)
Yeast: Wyeast 1968 London ESB yeast - used yeast cake from a prior batch.
Log: Ferment for one week at 68°F, transfer to secondary and ferment for one more week at 68°F.
Carbonation: Bottle with 3/4 cup of corn sugar. If kegging, apply 1.5 volumes CO2.
